3-Ingredient Cookies

These sweet, crispy, and aromatic cookies are made with just 3 simple ingredients! Perfect for pairing with tea, cocoa, or warm milk, they’re quick to prepare and melt-in-your-mouth delicious.


Ingredients:

  • 6 oz. (¾ cup) butter, softened to room temperature
  • 3.5 oz. (½ cup) superfine sugar
  • 9 oz. (2 ¼ cups) all-purpose flour
  • Optional: ½ cup raw sugar or large-granulated sugar for coating

Instructions:

  1. Cream Butter and Sugar:
    In a mixing bowl, beat the butter and superfine sugar together with an electric mixer until light, fluffy, and well combined.
  2. Form the Dough:
    Sift the flour into the bowl and mix until a soft dough forms. Avoid overmixing.
  3. Shape the Dough:
    • Transfer the dough to a flat surface and form it into a long rectangular prism (or log shape) using your hands.
    • Roll the dough in a layer of raw or granulated sugar until evenly coated.
  4. Chill:
    Wrap the dough tightly in cling film and refrigerate for 1 hour. Chilling helps the cookies hold their shape and enhances flavor.
  5. Slice and Bake:
    • Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.
    • Remove the dough from the fridge and slice it into even squares (about ½ inch thick). Place them on the prepared baking sheet.
    • Bake for 20 minutes, or until the edges are light golden brown.
  6. Cool and Serve:
    Let the cookies cool slightly on the baking sheet before transferring to a wire rack. Enjoy with tea, cocoa, or milk!

Notes:

  • Butter Tip: Softened butter whips easily. If short on time, cut it into pieces and microwave briefly to soften (not melt).
  • Superfine Sugar Substitute: If you don’t have superfine sugar, make it at home by pulsing regular granulated sugar in a blender or food processor until fine.
  • Spacing Tip: These cookies don’t spread much during baking, so you can place them close together on the tray.
