Recipe Highlights

  • Course: Breakfast, Brunch, Dessert
  • Cuisine: American
  • Prep Time: 10 minutes
  • Cook Time: 35 minutes
  • Total Time: 45 minutes
  • Servings: 12

Ingredients

For the Cake:

  • 1 box yellow cake mix (15.25 oz)
  • 1 box instant lemon pudding mix (3.4 oz)
  • ¾ cup water
  • ¾ cup oil
  • 4 eggs

For the Soaking Syrup:

  • 2 cups powdered sugar
  • ⅓ cup lemon juice
  • 2 tbsp unsalted butter, melted
  • 2 tbsp water

Instructions

  1. Preheat the Oven:
Preheat to 350°F and grease a 9×13-inch baking pan.
  2. Mix the Batter:
In a large bowl, use an electric mixer to beat the eggs. Add the cake mix, pudding mix, water, and oil, then mix until smooth and fully combined.
  3. Bake the Cake:
Pour the batter into the prepared pan. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  4. Prepare the Syrup:
While the cake bakes, mix melted butter, lemon juice, water, and powdered sugar in a bowl until smooth.
  5. Soak the Cake:
Once the cake is done, poke holes all over the warm cake with a skewer or fork. Slowly pour the soaking syrup over the cake, ensuring it seeps into the holes.
  6. Cool & Serve:
Let the cake cool completely in the pan before slicing and serving.

This Lemon Cake is the ultimate winter indulgence—soft, sweet, and packed with fresh lemony goodness. Whether you’re serving it for breakfast, brunch, or dessert, it’s guaranteed to brighten up any occasion. ????✨
