Air Fryer Parmesan Crusted Chicken with Mayo

Air fryer Parmesan crusted chicken with mayo is a juicy, flavorful dish with a crispy, golden crust. The mayonnaise keeps the chicken tender while helping the Parmesan and breadcrumbs stick perfectly. This quick and easy recipe is perfect for weeknight dinners!


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup mayonnaise
  • 1/3 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (panko or Italian-style)
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp black pepper
  • Cooking spray

Instructions

  1. Preheat the Air Fryer:
    • Preheat your air fryer to 375°F (190°C) for 3-5 minutes.
  2. Prepare the Mayo Mixture:
    • In a small bowl, mix the mayonnaise, grated Parmesan, garlic powder, paprika, and black pepper until smooth.
  3. Bread the Chicken:
    • Pat the chicken breasts dry with paper towels. Spread a thin, even layer of the mayo mixture over the top of each chicken breast.
    • Press the breadcrumbs onto the mayo-coated side of each chicken breast to create the crust.
  4. Cook in the Air Fryer:
    • Lightly spray the air fryer basket with cooking spray. Place the chicken breasts in the basket in a single layer, crust side up.
    • Air fry for 10-12 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the crust is golden and crispy.
  5. Serve:
    • Let the chicken rest for 2-3 minutes before serving. Pair with a side salad, roasted veggies, or mashed potatoes for a complete meal.

Tips for Perfect Air Fryer Parmesan Crusted Chicken

  • Use Thin Breasts: Pound the chicken breasts to an even thickness for faster, even cooking.
  • Adjust Cooking Time: If your chicken breasts are thicker, add 2-3 minutes to the cooking time.
  • Make It Spicy: Add a pinch of cayenne pepper to the mayo mixture for a kick.
  • Crispier Crust: Spray the tops lightly with cooking spray before air frying to enhance browning.
