Alice Springs Chicken

Alice Springs Chicken is a flavorful dish featuring juicy chicken breasts topped with honey mustard, smoky bacon, sautéed mushrooms, and melted cheese. This copycat recipe of the famous Outback Steakhouse dish is perfect for a restaurant-quality meal at home.


Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Toppings:

  • 6 slices bacon, cooked and crumbled
  • 1 cup mushrooms, sliced
  • 2 tbsp unsalted butter
  • 1 1/2 cups shredded cheddar and Monterey Jack cheese blend

For the Honey Mustard Sauce:

  • 1/2 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 2 tbsp honey
  • 1 tsp lemon juice

Instructions

  1. Prepare the Sauce:
    • In a small bowl, whisk together mayonnaise, Dijon mustard, honey, and lemon juice. Cover and refrigerate while preparing the chicken.
  2. Cook the Chicken:
    • Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat. Cook the chicken for 4-5 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside.
  3. Sauté the Mushrooms:
    • In the same skillet, melt butter and sauté the sliced mushrooms for 3-4 minutes, or until tender.
  4. Assemble the Chicken:
    • Preheat your oven to 375°F (190°C). Place the cooked chicken breasts in a baking dish. Spread 1-2 tablespoons of honey mustard sauce on each chicken breast.
    • Top each with crumbled bacon, sautéed mushrooms, and shredded cheese.
  5. Bake:
    • Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
  6. Serve:
    • Drizzle with additional honey mustard sauce if desired. Serve with your favorite sides, such as mashed potatoes, roasted vegetables, or a fresh salad.

  • Marinate for Extra Flavor: Marinate the chicken in a little honey mustard sauce for 1-2 hours before cooking.
  • Use Thick-Cut Bacon: For more texture and flavor, opt for thick-cut bacon.
