Amazing Forgotten Chicken

This “forgotten chicken” recipe is a no-fuss dinner that’s perfect for busy nights. Tender chicken, savory rice, and a creamy blend of soups bake together in one dish to create a meal that’s hearty, delicious, and practically cooks itself!


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup uncooked long-grain white rice
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) cream of chicken soup
  • 1 1/2 cups water or chicken broth
  • 1 envelope onion soup mix
  • 1/2 tsp garlic powder (optional, for extra flavor)
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Mix the Base: In the baking dish, combine rice, cream of mushroom soup, cream of chicken soup, and water or chicken broth. Stir until well blended.
  3. Season the Chicken: Place chicken breasts on top of the rice mixture. Sprinkle with onion soup mix, garlic powder (if using), and season with salt and pepper.
  4. Cover and Bake: Cover the dish tightly with aluminum foil to seal in moisture. Bake for 1 hour and 30 minutes without uncovering.
  5. Serve: Remove from the oven, let rest for 5 minutes, and fluff the rice before serving. Enjoy this easy, comforting meal!

Tips for Perfect Forgotten Chicken

  • Don’t peek while baking: Keeping it covered ensures the rice absorbs the liquid properly.
  • Add veggies: Mix in frozen peas, carrots, or chopped mushrooms for extra nutrition.
  • Use chicken thighs: For even juicier results, swap chicken breasts with boneless, skinless thighs.
