A Hearty, Homestyle Dish for Cozy Fall Evenings

When the air turns crisp and the leaves start to fall, nothing beats a warm, hearty meal straight from the oven. The Amish Hamburger with Fall Veggies Bake is a rustic, comforting dish that brings together simple ingredients with rich flavors. Ground beef, seasonal vegetables, and a creamy, savory sauce meld together in a baked casserole that’s both nourishing and satisfying.

This dish is inspired by Amish country cooking, which is all about using fresh, local ingredients and simple techniques to create meals that feel like home. It’s perfect for a weeknight dinner, a potluck gathering, or a cozy weekend meal. Serve it with crusty bread, a side salad, or enjoy it on its own—it’s an easy, one-pan meal that will warm your soul.

Ingredients

For the Hamburger Base:

  • 500g ground beef (lean or 80/20 for extra flavor)
  • 1 small onion (100g), finely chopped
  • 2 garlic cloves (10g), minced
  • 1 teaspoon salt (5g)
  • ½ teaspoon black pepper (2g)
  • 1 teaspoon Worcestershire sauce (5g)
  • 1 tablespoon butter (15g) or oil for sautéing

For the Fall Veggies:

  • 200g butternut squash, diced
  • 150g carrots, sliced
  • 150g potatoes, cubed
  • 100g Brussels sprouts, halved
  • 1 teaspoon dried thyme (2g)
  • 1 teaspoon smoked paprika (2g)
  • 2 tablespoons olive oil (30g)
  • Salt and pepper, to taste

For the Creamy Topping:

  • 200ml heavy cream
  • 100g shredded cheddar cheese
  • 50g sour cream
  • 1 egg (50g), beaten
  • ½ teaspoon nutmeg (1g)

Instructions

Step 1: Prepare the Hamburger Base

  1. Preheat your oven to 190°C (375°F).
  2. In a skillet, melt butter (or heat oil) over medium heat. Add chopped onion and garlic, and sauté until fragrant, about 3 minutes.
  3. Add ground beef, salt, pepper, and Worcestershire sauce. Cook until browned and no longer pink, breaking it apart with a spoon. Drain excess fat if necessary.
  4. Transfer the cooked beef to a greased baking dish (about 9×13 inches).

Step 2: Roast the Fall Vegetables

  1. In a bowl, toss the butternut squash, carrots, potatoes, and Brussels sprouts with olive oil, thyme, paprika, salt, and pepper.
  2. Spread the vegetables on a baking sheet and roast in the oven for 15 minutes or until they start to soften.
  3. Once roasted, add them on top of the cooked hamburger layer in the baking dish.

Step 3: Make the Creamy Topping

  1. In a small bowl, whisk together heavy cream, shredded cheddar cheese, sour cream, egg, and nutmeg.
  2. Pour the mixture evenly over the hamburger and vegetable layers in the baking dish.

Step 4: Bake and Serve

  1. Place the dish in the oven and bake uncovered for 25–30 minutes until the top is golden and bubbly.
  2. Let it rest for 5 minutes before serving.
  3. Serve warm with a side of crusty bread or a fresh salad. Enjoy!

Tips & Tricks for the Perfect Amish Bake

✨ Use high-quality ground beef – A mix of lean and slightly fatty beef (80/20) gives the best balance of flavor and texture.

✨ Don’t skip roasting the veggies – It enhances their natural sweetness and adds depth to the dish.

✨ Make it ahead – Assemble everything a day before, refrigerate, and bake when ready for a hassle-free meal.

✨ Experiment with cheeses – Try Gruyère or Monterey Jack for a unique twist.

✨ Add extra protein – Mix in crumbled sausage or bacon for an even heartier dish.

Why This Recipe is a Fall Favorite

This Amish-style hamburger bake isn’t just easy to make—it’s also a one-dish wonder that captures the heartiness of fall. It’s packed with comforting flavors, seasonal veggies, and a creamy topping that ties everything together.

Perfect for a family dinner, a potluck, or meal prep, this dish is satisfying and filling without being too heavy. Plus, it’s a great way to use up fall vegetables in a creative, delicious way!
