  • Apples – 2 large, peeled and diced (Granny Smith or Honeycrisp)
  • Brown sugar – 50g (¼ cup)
  • Cinnamon – 1 tsp
  • Nutmeg – ¼ tsp
  • Cornstarch – 1 tsp
  • Lemon juice – 1 tbsp

For the Crisp Topping:

  • Rolled oats – 60g (½ cup)
  • Flour – 50g (⅓ cup)
  • Brown sugar – 50g (¼ cup)
  • Butter – 40g (3 tbsp), melted
  • Cinnamon – ½ tsp

How to Make Apple Crisp Cheesecake

Step 1: Prepare the Crust

  1. Preheat the oven to 175°C (350°F).
  2. Mix crushed graham crackers, melted butter, brown sugar, and cinnamon.
  3. Press the mixture into a 9-inch springform pan and bake for 8 minutes. Let it cool.

Step 2: Make the Cheesecake Filling

  1. In a bowl, beat cream cheese and sugar until smooth.
  2. Add sour cream, vanilla extract, and flour; mix until combined.
  3. Add eggs one at a time, beating at low speed (don’t overmix!).
  4. Pour the batter over the cooled crust.
