Ingredients (Makes 1 Standard 9-Inch Cheesecake)

For the Graham Cracker Crust:

  • 200g (2 cups) graham cracker crumbs
  • 50g (¼ cup) granulated sugar
  • 113g (½ cup) unsalted butter, melted

For the Cheesecake Filling:

  • 680g (24 oz) cream cheese, softened
  • 200g (1 cup) granulated sugar
  • 3 large eggs
  • 240g (1 cup) sour cream
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice

For the Apple Layer:

  • 2 large apples, peeled, cored, and diced
  • 50g (¼ cup) brown sugar
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch

For the Crumble Topping:

  • 100g (¾ cup) all-purpose flour
  • 50g (¼ cup) brown sugar
  • 50g (¼ cup) granulated sugar
  • ½ tsp cinnamon
  • 85g (6 tbsp) unsalted butter, melted
  • 50g (½ cup) rolled oats

Instructions

Step 1: Make the Crust

  1. Preheat oven to 175°C (350°F).
  2. Mix graham cracker crumbs, sugar, and melted butter in a bowl.
  3. Press firmly into a 9-inch springform pan and bake for 8 minutes. Set aside.

Step 2: Prepare the Apple Layer

  1. In a saucepan, mix apples, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch.
  2. Cook over medium heat for 5-7 minutes, until apples soften slightly. Remove from heat and set aside.

Step 3: Make the Cheesecake Filling

  1. In a large mixing bowl, beat cream cheese and sugar until smooth.
  2. Add eggs, one at a time, mixing until just combined.
  3. Mix in sour cream, cornstarch, vanilla, and lemon juice until smooth.

Step 4: Assemble the Cheesecake

  1. Pour the cheesecake filling over the pre-baked crust.
  2. Evenly distribute the cooked apple mixture over the filling.
  3. In a bowl, mix flour, brown sugar, granulated sugar, cinnamon, melted butter, and oats to form a crumble.
  4. Sprinkle the crumble topping over the apples.

Step 5: Bake the Cheesecake

  1. Lower oven temperature to 160°C (325°F).
  2. Bake for 55-65 minutes, or until the edges are set but the center is slightly jiggly.
  3. Turn off the oven and let the cheesecake cool inside for 1 hour.
  4. Refrigerate for at least 4 hours (preferably overnight) before serving.
