Apple Fritter Bites

These baked treats are a lighter twist on the classic fritter, making them an irresistible snack or dessert you can enjoy guilt-free.

Ingredients

Dry Ingredients:

  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp kosher salt
  • 2 tsp ground cinnamon

Wet Ingredients:

  • ¼ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 large egg
  • ½ tsp vanilla extract
  • ½ cup unsweetened applesauce

Filling:

  • 1 ½ cups finely diced Honeycrisp or Gala apples (about 2 medium apples)

Apple Cider Glaze:

  • 2 cups powdered sugar
  • ⅓ cup + 2 tbsp apple cider or juice

Instructions

  1. Prepare the Oven:
    Preheat to 400°F and grease a baking sheet with nonstick spray.
  2. Mix the Dry Ingredients:
    In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. Combine the Wet Ingredients:
    In a large bowl, whisk melted butter and sugar until smooth. Mix in the egg, vanilla, and applesauce until fully combined.
  4. Make the Batter:
    Gradually fold the dry ingredients into the wet mixture. Gently stir in the diced apples.
  5. Scoop & Bake:
    Drop 1-tablespoon portions of batter onto the prepared baking sheet, leaving space between each. Bake for 10 minutes.
  6. Broil & Glaze:
    Turn the broiler to high. While waiting, whisk powdered sugar with apple cider to create a glaze. Brush the fritters with a thin layer of glaze, then broil for 2–4 minutes, rotating the pan frequently, until the glaze caramelizes slightly.
  7. Finish & Serve:
    Brush the remaining glaze over the fritters and let them rest for 15 minutes to set.
