Arepas con Queso are a beloved staple in Colombian and Venezuelan cuisine. Ingredients

  • 2 cups pre-cooked cornmeal (masarepa) (such as PAN)
  • 1 ½ cups warm water
  • ½ teaspoon salt
  • 1 cup shredded cheese (mozzarella, queso fresco, or any melty cheese)
  • ½ cup milk (optional, for extra softness)
  • 2 tablespoons butter, melted
  • ½ cup grated cheese (for topping, optional)
  • Butter or oil for cooking

Instructions

Step 1: Prepare the Dough

  1. In a large bowl, combine the pre-cooked cornmeal and salt.
  2. Slowly pour in the warm water and mix with your hands or a spoon until well combined. Let it sit for 2-3 minutes to absorb the liquid.
  3. Add the melted butter, shredded cheese, and milk (if using). Knead the dough until it becomes smooth and slightly sticky but easy to shape.

Step 2: Shape the Arepas

  1. Divide the dough into equal portions (about the size of a golf ball).
  2. Flatten each portion into a thick disc about ½ inch thick and 3-4 inches wide.
  3. If you like extra cheese, make an indentation in the center, add a bit more cheese, and seal the edges.

Step 3: Cook the Arepas

  1. Heat a griddle or non-stick skillet over medium heat and add a little butter or oil.
  2. Cook the arepas for 5-7 minutes per side until golden brown and crispy. Flip carefully and press lightly with a spatula.
  3. If desired, sprinkle a little extra grated cheese on top while cooking.
