Avocado, Mozzarella, and Tomato Grilled Cheese

It’s the perfect quick and easy lunch or dinner option that feels indulgent while still packing in fresh ingredients.


Ingredients:

  • 2 slices of sourdough or artisan bread
  • 1/2 ripe avocado, mashed
  • 3-4 slices fresh mozzarella cheese
  • 2-3 slices ripe tomato
  • 1 tablespoon butter (or olive oil for a lighter option)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano (or fresh basil leaves for a Caprese-style twist)
  • Salt and black pepper, to taste

Instructions:

  1. Prepare the Ingredients:
    • Mash the avocado with a pinch of salt and black pepper for added flavor.
    • Slice the fresh mozzarella and tomatoes. If your tomatoes are extra juicy, pat them dry with a paper towel to prevent the sandwich from becoming soggy.
  2. Assemble the Sandwich:
    • Spread the mashed avocado on one slice of bread.
    • Layer the mozzarella slices on top, followed by the tomato slices.
    • Sprinkle with garlic powder and oregano (or add fresh basil for extra freshness).
    • Top with the second slice of bread.
  3. Toast the Sandwich:
    • Heat a skillet or griddle over medium-low heat.
    • Spread butter on the outer sides of the sandwich (or brush with olive oil).
    • Place the sandwich in the skillet and cook for 3-4 minutes on each side, pressing down slightly with a spatula, until golden brown and crispy.
    • Flip carefully and cook the other side until the mozzarella is fully melted and gooey.
  4. Serve and Enjoy:
    • Remove from the skillet, let it cool for a minute, then slice in half.
    • Serve with a side of soup, salad, or enjoy it on its own!

Variations and Substitutions:

  • Add Protein: Layer in crispy bacon or grilled chicken for a heartier sandwich.
  • Extra Cheese: Swap or mix in provolone, cheddar, or gouda for a different cheesy experience.
