Avocado Pasta

Avocado Pasta is a fresh, creamy, and dairy-free dish that’s perfect for busy weeknights! The smooth avocado sauce comes together while your pasta cooks, making this a quick and easy meal. Packed with flavor from ripe avocado, garlic, and fresh veggies, it’s a light yet satisfying dish you’ll love. For an extra twist, try adding pesto or using gluten-free pasta options like zucchini or sweet potato noodles. ????????

Ingredients:

  • 8 oz dry pasta
  • 1 large ripe avocado
  • 1 medium tomato, diced
  • 1 green onion, finely sliced
  • 1/4 tsp finely grated garlic
  • Juice from 1/4 lemon
  • Salt & freshly ground pepper to taste

Directions:

  1. Boil salted water and cook the pasta. Reserve 1/2 cup of pasta water before draining.
  2. In a bowl, mash the avocado, then mix in garlic, lemon juice, salt, and pepper.
  3. Add 1/4 cup of pasta water to the avocado mixture and stir.
  4. Combine the cooked pasta, tomatoes, and green onion. Toss until the pasta is evenly coated with the creamy sauce.

Tips:

  • Add pesto: Turn this into a delicious avocado pesto pasta by mixing in 1 tbsp of pesto.
  • Gluten-Free Option: Use gluten-free pasta or veggie noodles like zucchini or sweet potato for a lighter, gluten-free meal.
