Bacon Cheeseburger Casserole

This hearty casserole combines all the flavors of a classic bacon cheeseburger in a comforting, low-carb dish. Perfect for dinner or meal prep!


Ingredients

  • 2 pounds ground beef
  • 2 cloves garlic, minced
  • ½ teaspoon onion powder
  • 1 pound cooked bacon, chopped
  • 8 large eggs
  • 1 cup heavy whipping cream
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 12 ounces shredded Cheddar cheese, divided

Instructions

1. Preheat the Oven:

Set your oven to 350°F (175°C) and lightly grease a 9×13-inch casserole dish.

2. Brown the Beef:

  1. Heat a large skillet over medium-high heat. Add the ground beef, minced garlic, and onion powder.
  2. Cook for about 5–7 minutes, stirring frequently, until the beef is browned and crumbly.
  3. Drain and discard excess grease, then spread the beef evenly in the prepared casserole dish.

3. Add the Bacon Layer:

Distribute the cooked bacon pieces evenly over the ground beef.

4. Prepare the Egg Mixture:

  1. In a medium bowl, whisk together the eggs, heavy whipping cream, salt, and black pepper.
  2. Stir in 8 ounces of the shredded Cheddar cheese.

5. Assemble the Casserole:

  1. Pour the egg and cheese mixture evenly over the beef and bacon layers.
  2. Sprinkle the remaining 4 ounces of Cheddar cheese over the top.

6. Bake:

Place the casserole in the preheated oven and bake for 30–35 minutes, or until the top is golden brown and the center is set.

7. Cool and Serve:

Let the casserole cool for 5 minutes to set the layers before slicing and serving.


Tips

  • Add Veggies: For a twist, add diced onions, bell peppers, or mushrooms to the beef while cooking.
  • Cheese Variations: Swap out Cheddar for Monterey Jack, Colby, or a mix for different flavors.
  • Meal Prep: This casserole stores well in the refrigerator for up to 4 days or in the freezer for 2 months. Reheat in the oven or microwave before serving.
