Baked Chicken Ricotta Meatballs with Spinach Alfredo Sauce

Tender and juicy chicken ricotta meatballs baked to perfection and served with a creamy spinach Alfredo sauce. This elegant and comforting dish is perfect for weeknight dinners or special occasions!


Ingredients:

For the Meatballs:

  • 1 lb ground chicken
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/3 cup breadcrumbs
  • 1 egg
  • 1 tsp garlic powder
  • 1/2 tsp salt

For the Spinach Alfredo Sauce:

  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 1/4 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped

Instructions:

  1. Prepare the meatballs: Preheat your oven to 400°F (200°C). In a large bowl, combine ground chicken, ricotta, Parmesan, breadcrumbs, egg, garlic powder, and salt. Mix until just combined. Shape into 1 1/2-inch meatballs and place on a greased baking sheet.
  2. Bake: Bake the meatballs for 20–25 minutes, or until golden brown and cooked through.
  3. Make the sauce: While the meatballs bake, melt butter in a skillet over medium heat. Add garlic and sauté for 1 minute until fragrant. Pour in heavy cream and simmer gently for 3–4 minutes. Stir in Parmesan cheese until melted, then add spinach and cook until wilted.
  4. Combine: Add the baked meatballs to the skillet with the Alfredo sauce, tossing gently to coat.
  5. Serve: Serve warm over pasta, rice, or with crusty bread for dipping. Garnish with extra Parmesan if desired.
