Baked Cod in Coconut Lemon Cream Sauce: A Quick and Flavorful Weeknight Dinner

July 14, 2025 by [email protected] Leave a Comment

Light, flaky cod fillets are baked in a luscious coconut lemon cream sauce for a vibrant dish that’s both easy and impressive. This recipe comes together quickly—perfect for busy weeknights—but feels elegant enough for guests. The creamy coconut base, bright lemon zest, and subtle garlic make this dish a flavor-packed favorite that pairs beautifully with rice or vegetables.

🍋 Ingredients

  • 4 cod fillets (about 5–6 oz each)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil or melted butter
  • Zest of 1 lemon
  • Juice of ½ lemon

For the Coconut Cream Sauce:

  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 1 cup full-fat coconut milk
  • ½ cup vegetable or chicken broth
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • Salt and black pepper, to taste
  • Optional: pinch of chili flakes or turmeric for added depth

👩‍🍳 Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  2. Season cod fillets with salt, pepper, lemon zest, and a drizzle of olive oil. Place in the baking dish.
  3. Make the sauce:
In a skillet over medium heat, warm olive oil. Sauté garlic for 1 minute until fragrant. Stir in coconut milk, broth, lemon juice, lemon zest, salt, and pepper. Simmer gently for 3–4 minutes until slightly thickened.
  4. Pour sauce over the cod in the baking dish.
  5. Bake for 15–18 minutes, or until cod is opaque and flakes easily with a fork. Spoon sauce over fillets before serving.
  6. Garnish with fresh parsley, lemon wedges, or red pepper flakes if desired.

💡 Tips

  • Use full-fat coconut milk for the creamiest sauce.
  • Don’t overbake—cod cooks quickly and stays flakiest when not overdone.
  • Add a pinch of turmeric or paprika for color and depth.
  • Fresh lemon juice and zest make the sauce shine—avoid bottled juice.

🔁 Variations & Substitutions

  • Swap cod for haddock, halibut, or tilapia—all bake well in this sauce.
  • Add cherry tomatoes or spinach to the sauce for extra veggies.
  • Use lime instead of lemon for a tropical twist.
  • Make it spicy with a teaspoon of Thai red curry paste stirred into the sauce.

❓ FAQs

Can I make this ahead of time?
You can prep the sauce and season the fish ahead, but bake just before serving for best texture.

Can I use frozen cod?
Yes—thaw it fully and pat dry before baking to avoid excess water in the sauce.

Is this dairy-free?
Yes! Coconut milk replaces traditional cream, making this naturally dairy-free.

Can I pan-sear instead of baking?
Absolutely. Just cook the cod in a skillet and pour the sauce over to finish.

🍽️ Serving Suggestions

  • Pair with roasted asparagus, green beans, or zucchini ribbons.
  • Top with fresh herbs like parsley, dill, or basil for a pop of color.
