This easy-to-make side dish combines the rich taste of garlic, butter, and fresh herbs with perfectly roasted potatoes, making it the ideal accompaniment for almost any meal. Whether you’re serving it alongside a juicy steak, grilled chicken, or enjoying it as a light snack, these potatoes will quickly become your go-to side dish.

Roasted to golden perfection, these potatoes have a crispy exterior and a fluffy interior, and the garlic butter sauce takes them over the top. It’s an effortless, one-pan recipe that requires minimal prep time but delivers big on flavor.


Ingredients

  • 800g baby potatoes (or regular potatoes, cut into small chunks)
  • 4 tablespoons unsalted butter (about 60g), melted
  • 4 cloves garlic, minced (about 12g)
  • 1 tablespoon fresh rosemary, chopped (5g)
  • 1 tablespoon fresh thyme, chopped (5g)
  • 1 teaspoon salt (5g), or to taste
  • ½ teaspoon black pepper (2.5g)
  • 1 tablespoon olive oil (15ml)
  • 1 tablespoon fresh parsley, chopped, for garnish
  • Optional: 1 teaspoon grated Parmesan cheese for extra flavor

Instructions

Step 1: Prep the Potatoes

  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper for easy cleanup.
  2. If using baby potatoes, simply wash them and slice them in half. If using regular potatoes, cut them into small cubes (around 2.5 cm) to ensure even cooking.

Step 2: Make the Garlic Butter

  1. In a small bowl, melt the butter in the microwave or on the stove.
  2. Add the minced garlic, chopped rosemary, and thyme to the butter, stirring to combine. Let the garlic and herbs infuse in the melted butter for 1-2 minutes for enhanced flavor.

Step 3: Coat the Potatoes

  1. Place the potatoes in a large mixing bowl.
  2. Drizzle the olive oil and garlic butter mixture over the potatoes. Toss the potatoes well to ensure they’re evenly coated. Add salt and black pepper to taste and toss again.

Step 4: Roast the Potatoes

  1. Spread the garlic butter-coated potatoes in a single layer on the prepared baking sheet.
