Baked Oatmeal Cups

These Baked Oatmeal Cups are a super convenient, healthy breakfast option that you can keep in your fridge or freezer for busy mornings! With four delicious flavors to choose from—Chocolate Chip, Apple Cinnamon, Blueberry Almond, and Peanut Butter Banana—you’ll never get bored! Plus, they’re vegan, gluten-free, and perfect for meal prep. Each cup is packed with fiber, protein, and healthy fats, making them the ideal start to your day.

Ingredients:

  • Oatmeal Cups Base:
    • 3 cups old fashioned rolled oats
    • ½ teaspoon cinnamon
    • 1 teaspoon baking powder
    • ½ teaspoon sea salt
    • 1 ½ cups unsweetened almond milk
    • ¼ cup maple syrup
    • 2 Tablespoons ground flaxseed (or chia seeds)
    • 1 teaspoon vanilla extract
  • Flavor Variations:
    • Chocolate Chip:
      • 2 Tablespoons peanut butter
      • 2 mashed bananas
      • ¼ cup mini chocolate chips (dairy-free)
    • Apple Cinnamon:
      • ½ teaspoon cinnamon
      • 2 Tablespoons almond butter
      • ½ cup applesauce
      • ¼ cup diced apple
    • Blueberry Almond:
      • 2 Tablespoons almond butter
      • ½ cup applesauce
      • ¼ cup blueberries
      • 2 Tablespoons sliced almonds
    • Peanut Butter Banana:
      • 3 Tablespoons peanut butter
      • 2 mashed bananas
      • Banana slices (optional for topping)

Directions:

  1. Prepare the Base: Preheat oven to 350°F and line a 12-cup muffin tin with silicone or paper liners, spraying with non-stick spray. In a large bowl, mix oats, cinnamon, baking powder, and salt.
  2. Make the Wet Mixture: In another bowl, whisk together almond milk, maple syrup, flaxseed, and vanilla. Let sit for 5 minutes.
  3. Customize Flavors: For each flavor, add the respective wet ingredients and mix into the dry oatmeal base. Spoon the mixture evenly into the muffin tin and top with the corresponding extras (chocolate chips, diced apple, almonds, etc.).
  4. Bake: Bake for 30-35 minutes or until set in the center and a toothpick comes out clean. Let cool before storing in the fridge or freezer.

Storage Tips:

  • Store in an airtight container in the fridge for up to 7 days or freeze for up to 3 months.
  • Reheat in the microwave or toaster oven for a quick breakfast.
