Ingredients (U.S. Standard Measurements – Makes about 20 cookies)

  • ½ cup (1 stick) unsalted butter, softened
  • ½ cup brown sugar, packed

  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 2 medium)
  • 1¾ cups all-purpose flour
  • ½ teaspoon baking soda

  • ¼ teaspoon salt
  • Optional: ½ cup chopped walnuts or chocolate chips

Instructions

Step 1: Prep the Oven

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 2: Cream Butter & Sugars

In a large bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy.

Step 3: Add Wet Ingredients

Beat in the egg, vanilla extract, and mashed bananas until well combined.

Step 4: Mix Dry Ingredients

In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt. Gradually add the dry mixture to the wet ingredients, mixing just until combined.

Step 5: Add Mix-ins

Fold in walnuts or chocolate chips, if using.

Step 6: Scoop & Bake

Drop heaping tablespoons of dough onto the baking sheet, spacing about 2 inches apart. Bake for 10–12 minutes, or until edges are lightly golden and centers are set.

Step 7: Cool

Let cool on the sheet for 5 minutes before transferring to a wire rack. Enjoy warm or store in an airtight container.
