Banana Pudding Cheesecake

This creamy Banana Pudding Cheesecake combines layers of rich cheesecake filling, fresh bananas, and classic Nilla Wafers for a nostalgic dessert. Perfect for gatherings or as a sweet treat for banana lovers!

Ingredients

  • 1 (8 oz.) block cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 cup heavy cream
  • 1 teaspoon pure vanilla extract
  • 1 (3.4 oz.) package instant vanilla pudding mix
  • 1 cup whole milk
  • 1 prepared graham cracker crust
  • 3 bananas, sliced (plus extra slices for garnish)
  • 30 Nilla Wafers
  • Whipped topping, for garnish
  • Crushed Nilla Wafers, for garnish

Directions

  1. Prepare Cheesecake Filling:
    In a large bowl, use a hand mixer (or stand mixer with the whisk attachment) to beat the softened cream cheese until smooth and fluffy, ensuring no lumps remain.
  2. Incorporate Sugar and Cream:
    Add the granulated sugar to the cream cheese and mix until fully combined. Slowly pour in the heavy cream and vanilla extract, beating until medium-stiff peaks form. Set aside.
  3. Mix Pudding Layer:
    In a separate medium bowl, whisk together the instant pudding mix and whole milk. Let the mixture sit in the fridge for 3 minutes to thicken. Fold the prepared pudding into the cheesecake filling until evenly combined.
  4. Assemble the Cheesecake:
    Spread half of the cheesecake filling into the graham cracker crust. Add a single layer of sliced bananas and 20 Nilla Wafers over the filling. Pour the remaining cheesecake mixture on top, smoothing the surface with a spatula.
  5. Refrigerate to Set:
    Chill the cheesecake in the refrigerator for at least 6 hours or overnight until firm. If the cheesecake feels too soft to slice, transfer it to the freezer for up to 1 hour before serving.
  6. Decorate and Serve:
    Before serving, pipe or spoon dollops of whipped topping around the cheesecake’s edge. Top each dollop with a banana slice and a whole Nilla Wafer. Sprinkle the center with crushed Nilla Wafers for garnish. Slice and enjoy!
