Banana Pudding Tiramisu with Caramel

Description

This Banana Pudding Tiramisu with Caramel is a heavenly twist on two beloved desserts. It combines the rich, creamy texture of banana pudding with the espresso-soaked layers of tiramisu, finished with a smooth caramel drizzle for extra indulgence. This no-bake dessert is perfect for any occasion, offering a unique flavor combination that will impress your guests!


Ingredients

For the Mascarpone Cream:

  • 3 large egg yolks
  • ½ cup (100g) granulated sugar
  • 8 oz (225g) mascarpone cheese, softened
  • 1 cup (240ml) heavy whipping cream
  • 1 tsp vanilla extract

For the Espresso Mixture:

  • 1 cup (240ml) brewed espresso or strong coffee, cooled
  • 2 tbsp coffee liqueur (optional)

For Assembly:

  • 24-30 ladyfinger biscuits (Savoiardi)
  • 3 ripe bananas, thinly sliced
  • ½ cup caramel sauce (plus extra for drizzling)
  • ½ tsp cinnamon (optional, for extra warmth)

For Garnish:

  • Whipped cream (optional)
  • Crushed vanilla wafers or cookie crumbles
  • Caramel drizzle

Instructions

Step 1: Prepare the Mascarpone Cream

  1. In a heatproof bowl, whisk the egg yolks and sugar together.
  2. Place the bowl over a pot of simmering water (double boiler method) and whisk continuously for about 5 minutes until the mixture thickens slightly. Remove from heat and let cool.
  3. Once cooled, mix in the mascarpone cheese and vanilla extract until smooth.
  4. In a separate bowl, whip the heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the mascarpone mixture.

Step 2: Prepare the Espresso Mixture

  1. In a shallow dish, mix the brewed espresso with coffee liqueur.

Step 3: Assemble the Tiramisu

  1. Quickly dip each ladyfinger into the espresso mixture (do not oversoak).
  2. Arrange a layer of soaked ladyfingers at the bottom of a 9×9-inch dish.
  3. Spread half of the mascarpone cream over the ladyfingers.
  4. Add a layer of banana slices and drizzle with caramel sauce.
  5. Repeat with another layer of soaked ladyfingers, mascarpone cream, bananas, and caramel.

Step 4: Chill & Serve

  1. Cover and refrigerate for at least 4 hours (overnight for best flavor).
  2. Before serving, garnish with whipped cream, crushed vanilla wafers, and a generous drizzle of caramel.
  3. Slice and enjoy!

  • Refrigeration: Store tiramisu covered in the fridge for up to 3 days.
  • Freezing: Freeze for up to 2 months. Thaw in the fridge before serving.
