Craving something cheesy, smoky, and satisfying? This BBQ Chicken Grilled Cheese is a mouthwatering twist on the classic grilled cheese sandwich. Juicy shredded chicken tossed in tangy barbecue sauce, layered with gooey melted cheese, and grilled to golden perfection between buttery slices of bread — it’s the perfect fusion of comfort food and BBQ goodness.

It’s quick, simple, and seriously addictive. Whether you’re feeding a hungry family or just treating yourself, this sandwich is sure to hit all the right notes!

Why You’ll Love This Sandwich

  • 🧀 Super melty and cheesy
  • 🍗 Great use for leftover or rotisserie chicken
  • 🔥 Big bold BBQ flavor
  • ⏱️ Ready in 15 minutes
  • 🍞 Perfectly crispy on the outside, warm and gooey inside

Ingredients (U.S. Standard Measurements – Makes 2 sandwiches)

  • 1 cup cooked shredded chicken (rotisserie, grilled, or leftover)
  • ⅓ cup barbecue sauce (your favorite brand or homemade)
  • 4 slices of sourdough, brioche, or thick sandwich bread
  • 1½ cups shredded cheese (cheddar, mozzarella, or a blend)
  • 2 tablespoons unsalted butter, softened
  • Optional add-ins: thin red onion slices, pickled jalapeños, fresh cilantro

Instructions

Step 1: Mix the Chicken

In a small bowl, mix shredded chicken with barbecue sauce until evenly coated. Set aside.

Step 2: Assemble the Sandwiches

Butter one side of each slice of bread. Place two slices, butter-side down, on a skillet or griddle. Layer with cheese, then BBQ chicken, then more cheese. Top with the remaining bread slices, butter-side up.

🧅 Want to add extra flavor? Add thin slices of red onion, jalapeños, or cilantro between the layers.

Step 3: Grill the Sandwiches

Heat a skillet over medium heat. Cook sandwiches for 3–5 minutes per side, pressing down slightly with a spatula, until bread is golden brown and cheese is melted.

Step 4: Serve

Let sit 1 minute before slicing in half. Serve with pickles, chips, coleslaw, or a crisp green salad.
