Biscuits and Sausage Gravy Breakfast Pizza

June 29, 2025 by [email protected] Leave a Comment

Craving the ultimate Southern-style breakfast with a twist? This Biscuits and Sausage Gravy Breakfast Pizza is a mouthwatering mashup of two comfort food classics — buttery biscuits and creamy sausage gravy — baked together into a golden, cheesy breakfast pizza that’s perfect for weekend brunch, holidays, or breakfast-for-dinner nights.

Built on a flaky biscuit crust, this pizza is topped with rich homemade sausage gravy, fluffy scrambled eggs, melted cheese, and even more crumbled sausage for good measure. It’s hearty, satisfying, and guaranteed to impress a hungry crowd. One bite and you’ll wonder why you haven’t been eating pizza for breakfast all along.

🛒 Ingredients

For the biscuit crust:

  • 1 can refrigerated biscuit dough (8-count or 16.3 oz)
  • 1 tablespoon melted butter (for brushing)

For the sausage gravy:

  • ½ pound breakfast sausage
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • Salt and black pepper, to taste
  • Pinch of cayenne or crushed red pepper (optional)

For the toppings:

  • 4 large eggs
  • 2 tablespoons milk
  • ½ tablespoon butter
  • ½ cup cooked crumbled sausage (extra from the gravy or fresh)
  • 1 cup shredded cheddar cheese (or cheese blend)
  • Chopped green onions or parsley, for garnish (optional)

👩‍🍳 Instructions

  1. Preheat the oven
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking sheet or line with parchment paper.
  2. Make the biscuit crust
Press the biscuits into the bottom of the pan, flattening and overlapping them slightly to form one large crust. Use your fingers to press and stretch the dough to the edges of the pan. Brush with melted butter and bake for 8–10 minutes, just until lightly golden and puffed. Remove from oven and set aside.
  3. Cook the sausage and make gravy
In a skillet over medium heat, cook ½ pound of breakfast sausage until browned and crumbled. Sprinkle in the flour and stir well, cooking for 1 minute. Gradually pour in the milk while stirring to create a thick gravy. Simmer until thickened, about 3–4 minutes. Season with salt, pepper, and a pinch of cayenne if desired.
  4. Scramble the eggs
In a separate pan, melt butter over medium heat. Whisk together eggs and milk, then cook until softly scrambled. Remove from heat while still slightly runny — they’ll finish cooking in the oven.
  5. Assemble the pizza
Spread the sausage gravy evenly over the biscuit crust. Layer the scrambled eggs on top, followed by the shredded cheese and additional crumbled sausage.
  6. Bake the pizza
Return the pizza to the oven and bake for another 8–10 minutes, or until the cheese is melted and bubbly.
  7. Garnish and serve
Let rest for 5 minutes. Sprinkle with chopped green onions or parsley if desired. Slice and serve warm.

✅ Tips & Tricks

  • No biscuit dough? Use crescent rolls or homemade biscuit dough instead.
  • Make it spicy: Use hot breakfast sausage or add jalapeños on top.
  • Extra fluffy eggs: Take them off the heat when just barely set — they’ll finish cooking in the oven.
  • Add veggies: Try sautéed bell peppers, spinach, or mushrooms for extra flavor and nutrition.
  • Make ahead: Prepare everything the night before and bake fresh in the morning.

🍴 Serving Suggestions
