Ingredients

For the Crust:

  • 120g (1 cup) crushed chocolate cookies (Oreo or graham crackers)
  • 50g (¼ cup) melted butter
  • 1 tbsp granulated sugar

For the Cheesecake Filling:

  • 250g (8 oz) cream cheese, softened
  • 80g (⅓ cup) granulated sugar
  • 1 large egg
  • 60ml (¼ cup) Baileys Irish Cream
  • ½ tsp vanilla extract
  • 60ml (¼ cup) heavy cream

For the Topping (Optional):

  • 120ml (½ cup) whipped cream
  • 30ml (2 tbsp) Baileys Irish Cream
  • Shaved chocolate or cocoa powder, for garnish

Instructions

Step 1: Prepare the Crust

  1. Preheat your oven to 165°C (325°F). Line a 12-cup muffin tin with cupcake liners.
  2. In a bowl, mix crushed cookies, melted butter, and sugar until combined.
  3. Divide evenly between the muffin cups, pressing firmly to form a crust.
  4. Bake for 5 minutes, then set aside.

Step 2: Make the Cheesecake Filling

  1. In a large bowl, beat cream cheese and sugar until smooth and creamy.
  2. Add egg, Baileys, vanilla, and heavy cream, mixing until just combined. Do not overmix!
  3. Divide the batter evenly over the pre-baked crusts.

Step 3: Bake & Cool

  1. Bake for 15-18 minutes, or until the cheesecakes are just set in the center.
  2. Let them cool in the pan for 10 minutes, then transfer to the fridge for at least 3 hours (overnight is best!).

Step 4: Add the Topping (Optional)

  1. Whip heavy cream with Baileys until soft peaks form.
  2. Pipe or spoon onto the chilled cheesecakes.
  3. Garnish with shaved chocolate or cocoa powder.

Step 5: Serve & Enjoy!
