Ingredients

For the Dough

  • 500g (4 cups) all-purpose flour
  • 250ml (1 cup) warm whole milk (40°C or 105°F)
  • 7g (2 1/4 tsp) active dry yeast
  • 50g (1/4 cup) granulated sugar
  • 5g (1 tsp) salt
  • 1 large egg
  • 60g (1/4 cup) unsalted butter, melted
  • 1 tsp vanilla extract

For the Filling

  • 100g (1/2 cup) unsalted butter, softened
  • 120g (1/2 cup) brown sugar
  • 1 tbsp ground cinnamon
  • 1 tbsp bourbon
  • 100g (6 slices) crispy bacon, chopped

For the Maple Bourbon Glaze

  • 120g (1 cup) powdered sugar
  • 60ml (1/4 cup) pure maple syrup
  • 1 tbsp bourbon
  • 1/2 tsp vanilla extract
  • 30g (2 tbsp) unsalted butter, melted
  • Pinch of salt

Instructions

Step 1: Make the Dough

  1. Activate the Yeast: In a bowl, combine warm milk, sugar, and yeast. Let it sit for 5-10 minutes until foamy.
  2. Mix the Dough: In a large bowl, whisk together flour and salt. Add the yeast mixture, egg, melted butter, and vanilla extract. Mix until a sticky dough forms.
  3. Knead the Dough: Knead for 8-10 minutes until smooth and elastic. (If using a stand mixer, knead for 5 minutes with a dough hook.)
  4. First Rise: Place the dough in a greased bowl, cover, and let rise for 1-1.5 hours or until doubled in size.

Step 2: Make the Filling

  1. In a bowl, mix softened butter, brown sugar, cinnamon, and bourbon until smooth.

Step 3: Roll & Fill the Dough

  1. Roll out the dough into a 30x40cm (12×16 inch) rectangle.
  2. Spread the cinnamon-bourbon filling evenly over the dough.
  3. Sprinkle with chopped crispy bacon.
  4. Roll the dough tightly into a log shape, starting from the longer edge.
  5. Cut into 12 equal rolls and place in a greased baking dish.

Step 4: Second Rise & Bake

  1. Cover the rolls and let them rise for 30-45 minutes until puffy.
  2. Preheat the oven to 180°C (350°F).
  3. Bake for 20-25 minutes or until golden brown.

Step 5: Make the Maple Bourbon Glaze

  1. In a bowl, whisk together powdered sugar, maple syrup, bourbon, vanilla, melted butter, and a pinch of salt until smooth.

Step 6: Glaze & Serve

  1. Drizzle the warm rolls with maple bourbon glaze.
  2. Sprinkle with extra crispy bacon bits for a final touch.
