Brown Sugar Banana Pancakes

These banana pancakes are the fluffiest, most flavorful breakfast you’ll ever make! ???? With mashed ripe bananas, brown sugar, and vanilla, they’re naturally sweetened and perfect for a cozy morning. Ingredients

  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ cup mashed ripe banana (about 2 small bananas)
  • 2 tablespoons melted unsalted butter
  • 1 large egg
  • ¾ cup buttermilk
  • ¼ cup packed brown sugar (preferably dark brown)
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, combine flour, baking powder, and salt.
  2. In another bowl, whisk together the mashed bananas, melted butter, egg, buttermilk, brown sugar, and vanilla extract.
  3. Add the wet ingredients to the dry ingredients and stir gently until combined. Be careful not to overmix!
  4. Heat a griddle or skillet over medium-low heat and grease with butter. Drop the batter in ⅓ cup portions, spreading to form even circles.
  5. Cook until bubbles form, then flip and cook until golden brown on both sides.
  6. Serve hot with butter, syrup, and your favorite toppings!
