Brown Sugar Cinnamon Pop Tart Bars

A nostalgic treat with a twist! These Brown Sugar Cinnamon Pop Tart Bars are packed with a buttery crust, a gooey brown sugar-cinnamon filling, and a sweet glaze. Perfect for breakfast, snack time, or dessert, they’re a homemade version of the classic Pop-Tart, but even better!


Ingredients

  • Crust:
    • 2 1/2 cups all-purpose flour
    • 1 cup unsalted butter, cold and cubed
    • 1/4 cup granulated sugar
    • 1/4 tsp salt
    • 6-8 tbsp ice water
  • Filling:
    • 3/4 cup brown sugar
    • 2 tsp ground cinnamon
    • 2 tbsp all-purpose flour
  • Glaze:
    • 1 cup powdered sugar
    • 1-2 tbsp milk
    • 1/2 tsp vanilla extract
    • 1/2 tsp cinnamon

A tender, flaky crust wraps around a rich, spiced filling and is topped with a perfectly sweet glaze for the ultimate indulgence.


Instructions

  1. Make the Crust:
    • In a food processor, combine flour, sugar, and salt. Add butter and pulse until mixture resembles coarse crumbs. Gradually add ice water, 1 tbsp at a time, until dough forms.
    • Divide dough in half, shape into disks, wrap in plastic, and chill for 30 minutes.
  2. Prepare Filling:
    • Mix brown sugar, cinnamon, and flour in a small bowl.
  3. Assemble Bars:
    • Preheat oven to 375°F (190°C). Roll out one dough disk into a rectangle and place on a parchment-lined baking sheet.
    • Spread the filling evenly, leaving a 1/2-inch border. Roll out the second dough disk and place it on top. Crimp edges to seal and prick the top with a fork.
  4. Bake:
    • Bake for 20-25 minutes, until golden brown. Cool completely before glazing.
  5. Glaze:
    • Whisk powdered sugar, milk, vanilla, and cinnamon until smooth. Drizzle or spread over the cooled bars. Let set before slicing into rectangles.
