These Brownie Bites with a Cookie Crust combine two irresistible desserts into one: a buttery cookie base and a rich, fudgy brownie center!   • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (90g) mini chocolate chips (optional)

For the Brownie Filling:

  • ½ cup (113g) unsalted butter
  • ¾ cup (135g) semi-sweet chocolate chips
  • ½ cup (100g) granulated sugar
  • ¼ cup (55g) brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ⅓ cup (40g) all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • ¼ teaspoon salt

👩‍🍳 Instructions

  1. Preheat oven to 350°F (175°C). Grease a mini muffin tin or line with mini cupcake liners.
  2. Make the cookie crust:
    In a large bowl, cream butter and sugars until fluffy. Add egg and vanilla and mix well.
    Stir in flour, baking soda, and salt until combined. Fold in mini chocolate chips if using.
    Scoop about 1 tablespoon of dough into each muffin cup and press to form a shallow crust.
  3. Make the brownie filling:
    In a saucepan or microwave-safe bowl, melt butter and chocolate chips together until smooth.
    Whisk in sugars, then eggs and vanilla. Stir in flour, cocoa powder, and salt until just combined.
