Ingredients (Makes About 24 Cookies)

  • Brownie mix (standard 18-oz / 510g box) – 1 box
  • All-purpose flour – 30g (¼ cup)
  • Vegetable oil – 80ml (⅓ cup)
  • Large eggs – 2
  • Vanilla extract – 1 tsp
  • Chocolate chips or chunks – 120g (¾ cup)

Optional mix-ins:

  • Chopped nuts (pecans, walnuts) – 60g (½ cup)
  • White chocolate chips – 60g (½ cup)
  • Sea salt – for sprinkling on top

Instructions

Step 1: Prepare the Dough

  1. Preheat your oven to 175°C (350°F). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the brownie mix, flour, eggs, vegetable oil, and vanilla extract. Stir until a thick dough forms.
  3. Fold in the chocolate chips (or any mix-ins you like).

Step 2: Scoop & Bake

  1. Use a cookie scoop or spoon to drop tablespoon-sized balls of dough onto the lined baking sheet, leaving about 5 cm (2 inches) of space between each.
  2. Bake for 9-11 minutes, or until the edges are set but the centers still look slightly soft.
  3. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
