Ingredients

  • 1 small head of cabbage, chopped
  • 1 large onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 bell pepper, diced (any color)
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes (no salt added)
  • 6 cups vegetable broth (or chicken broth)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp smoked paprika
  • Salt and black pepper, to taste
  • 1/4 tsp red pepper flakes (optional, for heat)
  • 1 tbsp olive oil (optional, for sautéing)

Instructions

  1. Prepare the Vegetables:
    • Chop and dice all the vegetables so they’re ready to cook.
  2. Sauté the Aromatics (Optional):
    • Heat olive oil in a large pot over medium heat. Add the onion, garlic, and bell pepper. Sauté for 3-4 minutes, or until softened and fragrant.
  3. Combine Ingredients:
    • Add the cabbage, carrots, celery, diced tomatoes, vegetable broth, oregano, basil, smoked paprika, and red pepper flakes (if using) to the pot. Stir to combine.
  4. Simmer:
    • Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the vegetables are tender.
  5. Season and Serve:
    • Taste the soup and adjust seasonings with salt and black pepper as needed. Serve hot and enjoy!
