Instructions

  1. Sauté Vegetables
    In a large soup pot, heat butter and olive oil over medium heat. Add onion, bell pepper, and celery. Cook for 4–5 minutes until softened. Stir in garlic and cook for another minute.
  2. Add Potatoes and Spices
    Add cubed potatoes, Cajun seasoning, smoked paprika, salt, and pepper. Stir to coat vegetables with spices.
