Cajun White Chicken Chili

It’s a flavorful medley of juicy shredded chicken, white beans, onions, peppers, and warming spices — all simmered in a creamy broth that’s as satisfying as it is spicy.

Perfect for chilly nights, game day meals, or when you’re craving something that’s both hearty and exciting, this dish will quickly become a staple on your dinner table.


🛒 Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 1 small jalapeño, minced (optional for extra heat)
  • 3 garlic cloves, minced
  • 2 teaspoons Cajun seasoning (store-bought or homemade)
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • Salt & black pepper to taste
  • 2 cups cooked shredded chicken (rotisserie or leftover chicken works great)
  • 2 (15 oz) cans great northern or cannellini beans, drained and rinsed
  • 1 (4 oz) can diced green chilies
  • 2 ½ cups chicken broth
  • ¾ cup frozen corn (optional)
  • ½ cup sour cream
  • ½ cup heavy cream or half-and-half
  • Juice of ½ lime
  • Chopped fresh cilantro, for garnish

👩‍🍳 Instructions

1. Sauté the aromatics

In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion, bell pepper, and jalapeño. Sauté for 4–5 minutes until softened. Stir in garlic and cook for another 30 seconds.

2. Add the spices and chicken

Stir in Cajun seasoning, paprika, cumin, salt, and pepper. Add the shredded chicken and mix well to coat with the spices.

3. Simmer the chili

Add beans, diced green chilies, corn, and chicken broth. Bring to a boil, then reduce heat and simmer uncovered for 15–20 minutes to let the flavors develop.

4. Make it creamy

Reduce heat to low. Stir in sour cream and heavy cream, and let the chili warm through — do not boil. Add lime juice for brightness.

5. Serve and garnish

Ladle into bowls and top with chopped cilantro, shredded cheese, sliced jalapeños, or crushed tortilla chips.
