Ingredients (Makes 24 Cookies)

For the Cookies:

  • Unsalted butter, softened – 115g (½ cup)
  • Granulated sugar – 100g (½ cup)
  • Brown sugar – 100g (½ cup)
  • Egg – 1 large
  • Vanilla extract – 1 teaspoon
  • All-purpose flour – 200g (1 ⅔ cups)
  • Baking soda – ½ teaspoon
  • Baking powder – ½ teaspoon
  • Ground cinnamon – 1 teaspoon
  • Salt – ¼ teaspoon
  • Apple, peeled, cored, and finely diced – 1 medium (~100g)
  • Caramel candies, chopped – 80g (⅔ cup) or soft caramel bits

For the Caramel Drizzle (Optional but Recommended!):

  • Caramel sauce or soft caramels – 120g (½ cup)
  • Heavy cream – 1 tablespoon

Instructions

Step 1: Prepare the Dough

  1. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  2. Add the egg and vanilla extract, mixing until well combined.

Step 2: Mix Dry Ingredients

  1. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
  2. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Step 3: Add Apples & Caramel

  1. Gently fold in the diced apple pieces and chopped caramel candies. Try not to overmix, as the apples will release moisture.

Step 4: Scoop & Bake

  1. Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.
  2. Scoop tablespoon-sized portions of dough onto the baking sheet, leaving about 5 cm (2 inches) of space between each cookie.
  3. Bake for 10-12 minutes, or until the edges are golden brown but the centers are still slightly soft.
  4. Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack.

Step 5: Caramel Drizzle

  1. If using caramel drizzle, melt the caramel sauce with heavy cream in a microwave-safe bowl in 15-second intervals, stirring until smooth.
  2. Drizzle the warm caramel over the cooled cookies for an extra gooey, delicious finish.
