  • 150g (¾ cup) granulated sugar
  • 2 large eggs

  • 30g (¼ cup) unsweetened cocoa powder
  • ¼ tsp salt

For the Cheesecake Layer:

  • 450g (16 oz) cream cheese, softened
  • 150g (¾ cup) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 120ml (½ cup) sour cream

For the Caramel Sauce:

  • 200g (1 cup) granulated sugar
  • 90g (6 tbsp) unsalted butter
  • 120ml (½ cup) heavy cream
  • Pinch of salt

Instructions

Step 1: Prepare the Brownie Base

  1. Preheat oven to 175°C (350°F). Grease and line a 9-inch springform pan with parchment paper.
  2. In a saucepan, melt butter over low heat. Remove from heat and whisk in sugar, eggs, and vanilla.
  3. Sift in flour, cocoa powder, and salt. Mix until smooth.
  4. Pour the batter into the prepared pan and bake for 15 minutes. Let it cool slightly.

Step 2: Make the Cheesecake Layer

  1. Reduce oven temperature to 160°C (320°F).
  2. In a large bowl, beat cream cheese and sugar until smooth.
  3. Add eggs one at a time, mixing well. Stir in vanilla extract and sour cream.
  4. Pour the cheesecake mixture over the partially baked brownie layer.

Step 3: Bake the Cheesecake

  1. Wrap the springform pan in foil and place it in a water bath (a larger pan filled with hot water).
  2. Bake for 50-55 minutes, or until the center is slightly wobbly but set.
  3. Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour.
  4. Refrigerate for at least 4 hours or overnight.

Step 4: Make the Caramel Sauce

  1. In a saucepan, heat sugar over medium heat until it melts into a golden caramel.
  2. Add butter, stirring continuously. Slowly pour in heavy cream, whisking until smooth.
  3. Stir in a pinch of salt and let it cool slightly before drizzling.

Step 5: Assemble & Serve

  1. Remove cheesecake from the pan and drizzle with caramel sauce.
  2. Slice and enjoy!
