Instructions

Step 1: Melt the Sugar

  1. In a heavy-bottomed saucepan, heat sugar over medium heat, stirring continuously with a wooden spoon or heat-resistant spatula.
  2. The sugar will clump at first, then melt into an amber-colored liquid. Be patient—it takes about 5-7 minutes.

Step 2: Add the Butter

  1. Once fully melted, add butter cubes, stirring constantly.
  2. The mixture will bubble up—this is normal! Stir until the butter is fully melted and combined.

Step 3: Add the Heavy Cream

  1. Slowly pour in heavy cream, whisking constantly. The caramel will bubble up again, so pour slowly!
  2. Continue whisking until the sauce becomes smooth and silky (about 1-2 minutes).

Step 4: Finish & Store

  1. Remove from heat and stir in salt and vanilla extract (if using).
  2. Let cool for 5 minutes, then pour into a heatproof jar.
  3. Store in the fridge for up to 3 weeks. Reheat slightly before using!
