Caramelized Banana Porridge with Chocolate, Pecans, and Almond Butter

This Caramelized Banana Porridge is the ultimate cozy breakfast, combining the natural sweetness of caramelized bananas with the richness of chocolate, crunchy pecans, and creamy almond butter. It’s an indulgent, yet healthy way to start your day!

Ingredients:

  • 1 banana
  • 45 g (1/2 cup) porridge oats
  • 250 ml (1 cup) milk of choice
  • 1 tsp cinnamon, plus more for topping
  • A pinch of salt
  • 1 tbsp maple syrup

Toppings:

  • Chocolate chips or chunks
  • Pecans
  • Almond butter

Instructions:

  1. Prepare the Banana: Cut the banana in half. Mash one half, and slice the other half into smaller pieces (or keep as halves, depending on your preference).
  2. Cook the Porridge: In a pan or microwave-safe bowl, combine the mashed banana, oats, cinnamon, salt, and milk. Stir to combine.
    • On the stovetop: Cook on medium-low heat for about 5 minutes, stirring occasionally, until the oats are soft and creamy.
    • In the microwave: Microwave for 2 minutes, stir, then microwave for an additional 1 minute and 30 seconds.
  3. Caramelize the Bananas: In a separate pan, heat the maple syrup and cinnamon over medium heat. Once hot, add the banana halves and cook until golden and caramelized (about 3-4 minutes).
  4. Assemble: Pour the porridge into a bowl, then top with chocolate chunks, pecans, almond butter, and the caramelized banana slices.
  5. Enjoy: Serve immediately and enjoy this comforting, indulgent breakfast!
