Cheese Ball with Pomegranate and Almonds

This flavorful cheese ball is a showstopper, combining rich cream cheese, tangy goat cheese, and savory Gruyère, all rolled in pomegranate arils and toasted almonds. A sprinkle of fresh herbs adds a burst of freshness, while the crunchy coating brings the perfect texture. Serve with crackers for an irresistible appetizer or party snack!

Ingredients:

  • 1 (8-oz.) block cream cheese, softened
  • 6 oz. goat cheese
  • 1 cup shredded Gruyère (or sharp white cheddar)
  • ½ cup sliced, toasted almonds
  • 2 Tbsp. chopped fresh parsley
  • 1 Tbsp. chopped fresh thyme
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 cup pomegranate arils
  • Crackers, for serving

Instructions:

  1. In a large bowl, combine the cream cheese, goat cheese, and Gruyère. Stir until smooth.
  2. Fold in the toasted almonds, parsley, and thyme until well distributed. Season with salt and pepper to taste.
  3. Shape the mixture into one large ball.
  4. Place the pomegranate arils on a large plate. Gently roll the cheese ball in the pomegranate until fully coated, pressing gently to fill in any cracks.
  5. Refrigerate the cheese ball for 20 minutes, or until firm.
  6. Serve with crackers and enjoy!
