Cheesy Au Gratin Potatoes Recipe

These Cheesy Au Gratin Potatoes are the perfect side dish for any occasion—creamy, indulgent, and loaded with three types of cheese! Made with Yukon Gold potatoes, sharp cheddar, and Gruyère, this easy-to-make recipe is a crowd favorite. Topped with crispy golden edges and fresh parsley, it’s sure to impress at your next family dinner or holiday gathering.

Ingredients

  • 6-7 medium Yukon Gold potatoes, thinly sliced (about 3 lbs)
  • ½ white or yellow onion, sliced
  • For the sauce:
    • 2 tbsp salted butter
    • ¼ cup all-purpose flour (substitute whole wheat or gluten-free)
    • 1 ½ cups unsweetened almond milk (or regular milk)
    • 8 oz sharp cheddar cheese (about 2 cups shredded)
    • ½ tsp garlic powder
    • ¾ tsp salt (or to taste)
    • Freshly ground black pepper
  • For topping:
    • ½ cup Gruyère cheese (or extra sharp cheddar)
    • ¼ cup grated Parmesan
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F. Grease a 2-quart baking dish or 8×12-inch dish with cooking spray or butter.
  2. Arrange the sliced potatoes in a slanted, layered pattern. Scatter the onion slices between the potatoes.
  3. For the sauce: In a medium saucepan, melt butter over medium heat. Whisk in flour and slowly add the milk, stirring continuously to avoid lumps. Bring to a simmer, then stir in cheddar cheese, garlic powder, salt, and pepper. Adjust seasoning to taste.
  4. Pour the sauce evenly over the potatoes and onions.
  5. Cover with foil and bake for 45 minutes.
  6. After 45 minutes, remove the foil and sprinkle with Gruyère and Parmesan. Return to the oven and bake for an additional 30-45 minutes until potatoes are tender and the top is golden brown.
  7. Garnish with chopped parsley and serve hot!

Recipe Notes:

  • For extra flavor, add chopped bacon to the potatoes before adding the sauce.
  • You can make this dish ahead of time and refrigerate for up to three days. Just bake when you’re ready!
  • To store leftovers, keep them in an airtight container in the fridge for up to 5 days.
