There’s something magical about a bubbling casserole dish coming out of the oven – especially when it’s filled with gnocchi! This Cheesy Baked Gnocchi Casserole is a one-dish wonder that transforms humble store-bought gnocchi into a crowd-pleasing, melty, cheesy masterpiece.

It’s a meal that feels like you’ve put in tons of effort… but really, it comes together with minimal prep. Great for weeknights, cozy Sundays, or whenever you need something warm, cheesy, and soul-soothing.


???? Ingredients (Serves 4–5)

For the Casserole:

  • 500g potato gnocchi (store-bought or homemade)
  • 15g olive oil (1 tbsp)
  • 1 small onion, finely chopped (100g)
  • 2 garlic cloves, minced (8g)
  • 400g canned crushed tomatoes
  • 100g tomato passata (or more crushed tomatoes)
  • 1 tsp dried oregano (1g)
  • ½ tsp chili flakes (optional, 1g)
  • Salt and pepper, to taste
  • 100g fresh spinach (or frozen, thawed and drained)

For the Cheese Layer:

  • 150g shredded mozzarella
  • 50g grated Parmesan cheese
  • 100g ricotta cheese (optional, for creamy pockets)
  • Fresh basil, for garnish

???? Instructions

Step 1: Cook the Gnocchi

  1. Bring a large pot of salted water to a boil.
  2. Add gnocchi and cook until they float (about 2–3 minutes). Drain and set aside.

Step 2: Make the Sauce

  1. In a large skillet, heat olive oil over medium heat.
  2. Add onion and cook until translucent, about 5 minutes.
  3. Stir in garlic and cook for 1 minute more.
  4. Add crushed tomatoes, passata, oregano, chili flakes, salt, and pepper. Simmer for 10 minutes.
  5. Stir in spinach and cook until wilted (1–2 minutes).

Step 3: Assemble the Casserole

  1. Preheat oven to 190°C (375°F).
  2. Stir the cooked gnocchi into the tomato sauce.
  3. Transfer half to a baking dish (about 25×18 cm).
  4. Add spoonfuls of ricotta, then top with half the mozzarella and Parmesan.
  5. Repeat with remaining gnocchi, ricotta, and cheese.

Step 4: Bake

  1. Cover with foil and bake for 20 minutes.
  2. Remove foil and bake an additional 10 minutes, until golden and bubbly.
  3. Let rest 5 minutes, garnish with basil, and serve warm.
