Cheesy Breakfast Sausage Casserole Recipe

Cheesy breakfast sausage casserole is the ultimate morning comfort food. Packed with savory sausage, fluffy eggs, gooey cheese, and buttery bread, this make-ahead dish is perfect for holidays, brunches, or lazy weekends.


Ingredients

  • 1 lb breakfast sausage (mild or spicy)
  • 6 large eggs
  • 2 cups whole milk
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 cups cubed bread (French bread or sourdough, about 1-inch pieces)
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 green onions, sliced (optional, for garnish)

Instructions

  1. Cook the Sausage:
    • In a large skillet, cook the breakfast sausage over medium heat until browned and fully cooked. Drain any excess grease and set aside.
  2. Prepare the Egg Mixture:
    • In a large mixing bowl, whisk together the eggs, milk, Dijon mustard, garlic powder, salt, and black pepper.
  3. Assemble the Casserole:
    • Grease a 9×13-inch baking dish. Spread the cubed bread evenly in the dish. Sprinkle the cooked sausage and 1 cup of cheddar cheese over the bread.
    • Pour the egg mixture evenly over the top, ensuring the bread is well soaked. Press the bread down gently to absorb the liquid.
  4. Top with Cheese:
    • Sprinkle the remaining cheddar cheese and mozzarella cheese evenly over the casserole.
  5. Refrigerate (Optional):
    • For best results, cover and refrigerate the casserole for at least 2 hours or overnight. This allows the flavors to meld and the bread to absorb the egg mixture.
  6. Bake the Casserole:
    • Preheat your oven to 350°F (175°C). Remove the casserole from the refrigerator and let it sit at room temperature for 15 minutes.
    • Bake uncovered for 40-45 minutes, or until the top is golden brown and the center is set.
  7. Serve:
    • Let the casserole cool for 5 minutes before slicing. Garnish with green onions if desired. Serve warm and enjoy!

  • Make It Your Own: Add sautéed mushrooms, bell peppers, or spinach for extra flavor and nutrition.
  • Use Day-Old Bread: Slightly stale bread works best as it absorbs the egg mixture without becoming mushy.
