Ingredients (in Grams)

For the Chicken

  • 500g boneless, skinless chicken breast (cut into bite-sized pieces)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 2 tablespoons olive oil

For the Pasta & Sauce

  • 250g penne pasta (or any pasta of choice)
  • 30g (2 tablespoons) butter
  • 4 cloves garlic (minced)
  • 30g (2 tablespoons) all-purpose flour
  • 500ml (2 cups) whole milk
  • 250ml (1 cup) chicken broth
  • 150g (1 ½ cups) shredded cheddar cheese
  • 75g (¾ cup) shredded mozzarella cheese
  • 50g (½ cup) grated Parmesan cheese
  • ½ teaspoon red pepper flakes (optional, for heat)
  • ½ teaspoon dried oregano

For Garnish

  • Fresh parsley (chopped)
  • Extra Parmesan cheese

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Add penne pasta and cook 1-2 minutes less than package instructions (it will finish cooking in the sauce).
  3. Drain and set aside.

Step 2: Cook the Chicken

  1. In a large pan, heat 2 tablespoons of olive oil over medium heat.
  2. Season the chicken pieces with salt, black pepper, garlic powder, and paprika.
  3. Cook for 5-7 minutes, stirring occasionally, until golden brown and fully cooked.
  4. Remove from the pan and set aside.

Step 3: Make the Cheesy Sauce

  1. In the same pan, melt butter over medium heat.
  2. Add minced garlic and sauté for 30 seconds until fragrant.
  3. Stir in flour and cook for 1 minute to create a roux.
  4. Slowly pour in milk and chicken broth, whisking constantly to avoid lumps.
  5. Simmer for 2-3 minutes, stirring frequently until slightly thickened.
  6. Reduce heat to low and add cheddar, mozzarella, and Parmesan cheese, stirring until smooth and creamy.
  7. Season with red pepper flakes (if using) and dried oregano.

Step 4: Combine Everything

  1. Add the cooked pasta and chicken back into the pan, stirring until well coated in the sauce.
  2. Simmer for 2 minutes until everything is heated through.

Step 5: Serve & Enjoy

  1. Garnish with chopped parsley and extra Parmesan cheese.
