Cheesy Chicken Pasta

This Cheesy Chicken Pasta is a creamy, cheesy, and hearty dish that’s perfect for weeknight dinners or when you’re craving comfort food. Loaded with tender chicken, pasta, and a rich cheese sauce, this one-pot recipe is as easy to make as it is delicious. It’s a guaranteed family favorite!


Ingredients:

  • 2 cups cooked chicken, shredded or diced (rotisserie chicken works great!)
  • 12 oz pasta (penne, rotini, or shells)
  • 2 tablespoons olive oil or butter
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream (or milk for a lighter option)
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • Optional garnish: chopped parsley or grated Parmesan

Instructions:

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Sauté the Garlic: In a large skillet or pot, heat the olive oil or butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Make the Sauce: Stir in the chicken broth, heavy cream, and cream of chicken soup. Mix until smooth. Add the Italian seasoning, paprika, salt, and black pepper. Bring to a gentle simmer.
  4. Melt the Cheese: Gradually stir in the cheddar and mozzarella cheeses, allowing them to melt completely into the sauce.
  5. Combine: Add the cooked pasta and chicken to the skillet. Toss to coat everything evenly in the cheese sauce. Cook for 2-3 minutes until heated through.
  6. Serve: Garnish with chopped parsley or grated Parmesan if desired. Serve hot with a side salad or garlic bread.
