Cheesy Loaded Meatloaf Casserole

June 12, 2025 by el hassan Leave a Comment

If you’re craving the comfort of meatloaf and mashed potatoes but want to shake things up a bit, this Cheesy Loaded Meatloaf Casserole is your answer.

This crowd-pleasing casserole layers seasoned ground beef, creamy mashed potatoes, melted cheese, and crispy bacon into one deliciously satisfying dish. It’s like a loaded baked potato met meatloaf and created the ultimate comfort food baby. Best of all? It’s easy to prep ahead and makes amazing leftovers.

Whether you’re feeding a family, a hungry crowd, or just meal-prepping for the week, this casserole is the cozy, hearty dish your table needs.

???? Ingredients (Serves 6–8)

For the Meatloaf Layer:

  • 1 ½ lbs ground beef (85% lean)
  • 1 cup Italian-style breadcrumbs
  • 2 large eggs
  • ½ cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup ketchup

For the Potato Layer:

  • 3 cups mashed potatoes (about 5–6 medium potatoes, peeled and boiled)
  • 2 tablespoons butter
  • ¼ cup sour cream
  • ¼ cup milk
  • Salt and pepper to taste

For the Topping:

  • 1 ½ cups shredded cheddar cheese
  • 6 slices cooked bacon, crumbled
  • 2 tablespoons chopped green onions or chives (optional)

????‍???? Instructions

Step 1: Prepare the Oven & Baking Dish

Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

Step 2: Make the Meatloaf Base

In a large bowl, mix together the ground beef, breadcrumbs, eggs, milk, chopped onion, garlic, Worcestershire sauce, salt, pepper, and ketchup until just combined.
Press the meat mixture into the bottom of the baking dish in an even layer.

Step 3: Bake the Meatloaf

Bake for 25–30 minutes, or until the meatloaf is mostly cooked through and juices run clear.

Step 4: Make the Mashed Potato Layer

While the meatloaf bakes, prepare your mashed potatoes. Mash the cooked potatoes with butter, sour cream, and milk until creamy. Season with salt and pepper to taste.

Step 5: Assemble the Casserole

Once the meatloaf layer is baked, carefully spread the mashed potatoes over the top. Sprinkle shredded cheddar evenly over the potatoes, then top with crumbled bacon.

Step 6: Final Bake

Return the casserole to the oven and bake for an additional 10–15 minutes, until the cheese is melted and bubbly. Broil for 2–3 minutes at the end for a golden cheesy crust (optional).

Step 7: Garnish & Serve

Let it rest for 5–10 minutes before slicing. Garnish with chopped green onions or chives if desired.

???? Tips & Tricks

  • Make it ahead: Assemble the full casserole (minus the cheese and bacon topping) and refrigerate for up to 24 hours before baking.
  • Go low-carb: Use mashed cauliflower instead of potatoes.
  • Add veggies: Mix in shredded carrots, zucchini, or finely chopped spinach to the meatloaf layer.
  • Spice it up: Add a pinch of red pepper flakes or hot sauce to the meat mixture for a little heat.
  • Mix up the cheese: Try mozzarella, Monterey Jack, or a cheddar blend for variety.

???? From Me to You

This recipe is pure nostalgic comfort food with a modern twist. I love how it turns the classic meatloaf into a one-dish wonder with creamy potatoes, gooey cheese, and bacon (because everything’s better with bacon, right?). It’s a hit at potlucks, weeknight dinners, and even as leftovers the next day.

Make it your own — the base is solid, and the toppings can be customized to your family’s taste!
