Ingredients:

  • 4 cups mashed potatoes (preferably leftover)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup milk (or cream for extra richness)
  • 1/4 cup sour cream
  • 1/4 cup chopped green onions or chives
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (preferably panko for extra crunch)
  • 1/4 cup melted butter (for brushing)
  • Olive oil spray or extra butter (for greasing muffin tin)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin with olive oil spray or butter.
  2. Prepare the Mashed Potatoes: If you’re using leftover mashed potatoes, ensure they’re smooth and well-mixed. If they’re too thick, add a little milk or cream to loosen them up to a scoopable consistency.
  3. Mix the Ingredients: In a large bowl, combine the mashed potatoes, shredded cheddar cheese, Parmesan cheese, sour cream, green onions, garlic powder, salt, and pepper. Stir until the mixture is well-combined and the cheese is evenly distributed.
  4. Form the Puffs: Scoop about 2 tablespoons of the mashed potato mixture into each muffin cup, pressing down gently to pack them in.
  5. Top with Breadcrumbs: Sprinkle the tops of each potato puff with breadcrumbs, pressing lightly to ensure they stick.
  6. Bake: Drizzle the melted butter over the tops of the puffs and bake for 20-25 minutes, or until the tops are golden and crispy.
  7. Serve: Allow the potato puffs to cool for a few minutes before carefully removing them from the muffin tin. Serve warm and enjoy!
