Ingredients (Serves 4-6)

For the Scramble

  • 500 g (1 lb) potatoes (diced into small cubes)
  • 2 tbsp olive oil or butter
  • 1 small onion (diced)
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • Salt & black pepper (to taste)
  • 6 large eggs
  • 2 tbsp milk or cream
  • 150 g (1½ cups) shredded cheddar cheese
  • 2 tbsp chopped fresh parsley or chives (for garnish)

Optional Add-Ins

  • 100 g (3.5 oz) cooked bacon or sausage (crumbled)
  • ½ bell pepper (diced)
  • ½ cup mushrooms (sliced)
  • ½ tsp crushed red pepper flakes (for a little heat)

Instructions

Step 1: Cook the Potatoes

  1. Heat olive oil or butter in a large skillet over medium heat.
  2. Add the diced potatoes and season with salt, black pepper, garlic powder, and smoked paprika.
  3. Cook for 10-12 minutes, stirring occasionally, until golden and crispy.

Step 2: Sauté the Onions & Any Add-Ins

  1. Add diced onions to the skillet and cook for 2-3 minutes until softened.
  2. If using bell peppers, mushrooms, or cooked bacon/sausage, add them now and cook for another 2-3 minutes.

Step 3: Scramble the Eggs

  1. In a bowl, whisk together eggs and milk.
  2. Push the potatoes to one side of the skillet, then pour the eggs into the empty space.
  3. Stir gently with a spatula until soft and fluffy, then mix with the potatoes.

Step 4: Add Cheese & Serve

  1. Sprinkle shredded cheese over the top and let it melt.
  2. Garnish with fresh parsley or chives.
  3. Serve hot and enjoy!
