  • 2 medium potatoes (about 300g), peeled and diced
  • 4 large eggs (about 200g)
  • 1/2 cup shredded cheddar cheese (about 60g)
  • 1/4 cup milk (about 60ml)
  • 1 tablespoon butter (about 14g)
  • 1 tablespoon olive oil (about 15ml)
  • 1/2 small onion (about 50g), diced
  • 1/2 teaspoon garlic powder (about 1g)
  • 1/4 teaspoon smoked paprika (optional, for extra flavor)
  • Salt and pepper, to taste
  • Fresh parsley or chives, chopped, for garnish (optional)

Step 1: Cook the Potatoes

In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and cook, stirring occasionally, for about 8-10 minutes, or until they’re golden and crispy on the outside and tender on the inside. Season with salt, pepper, and garlic powder during the last 2 minutes of cooking.

Step 2: Sauté the Onion

Add the diced onion to the skillet with the potatoes and cook for another 2-3 minutes, until the onion becomes soft and translucent.
