???? Ingredients (Serves 4)

  • 250g ground beef (lean or regular)
  • 150g long grain white rice (uncooked)
  • 400ml beef or chicken broth
  • 100g canned diced tomatoes (or fresh)
  • 100g canned sweet corn, drained
  • 50g tomato paste
  • 100g shredded cheddar cheese
  • 1 small onion (100g), finely chopped
  • 1 garlic clove, minced (3g)
  • 2 tbsp olive oil (30ml)
  • Salt and pepper to taste

???? Taco Seasoning:

  • 1 tsp smoked paprika (3g)
  • 1 tsp ground cumin (2g)
  • ½ tsp chili powder (1g)
  • ½ tsp dried oregano (1g)
  • ½ tsp garlic powder (1g)
  • Optional: pinch of cayenne for heat

???? Instructions

1. Sauté the Beef & Veg

Heat olive oil in a large skillet over medium heat. Add chopped onion and garlic, cooking until soft and fragrant (about 3 minutes).

Add ground beef and cook until browned. Drain excess fat if needed.

2. Season It

Stir in the tomato paste and all the taco seasoning spices. Mix well to coat the beef with flavor.

3. Add the Base

Pour in the uncooked rice, diced tomatoes, corn, and broth. Stir to combine.

Bring the mixture to a gentle boil, then reduce the heat to low. Cover and simmer for 18–20 minutes, or until rice is cooked and liquid is absorbed. Stir occasionally to prevent sticking.

4. Make It Cheesy

Once rice is tender, stir in half the shredded cheddar. Sprinkle the remaining cheese on top, cover again, and let sit for 3–5 minutes until melted.

5. Serve & Enjoy

Fluff with a fork and garnish with your favorite toppings (see below).
