  • ½ tsp garlic powder (1g)

For the Roasted Sweet Potatoes:

  • 1 large sweet potato (250g), peeled and cut into small cubes
  • 1 tbsp olive oil (15ml)
  • ½ tsp salt (2.5g)
  • ¼ tsp cinnamon (0.5g), for a hint of warmth
  • ¼ tsp smoked paprika (0.5g), for extra depth

For the Bowl Base:

  • 50g mixed greens (spinach, arugula, or kale)
  • ½ small red onion (40g), thinly sliced
  • ½ avocado (70g), sliced
  • 1 tbsp pumpkin seeds (10g), optional for crunch

For the Dressing:

  • 2 tbsp Greek yogurt (30g)
  • 1 tbsp lemon juice (15ml)
  • 1 tbsp olive oil (15ml)
  • ½ tsp honey (3g)
  • 1 clove garlic, minced (5g)
  • Salt and pepper, to taste

Instructions

Step 1: Roast the Sweet Potatoes

  1. Preheat your oven to 200°C (400°F).
  2. Toss cubed sweet potatoes with olive oil, salt, cinnamon, and smoked paprika in a bowl.
  3. Spread them out on a baking sheet and roast for 20-25 minutes, flipping halfway through, until golden brown and tender.

Step 2: Cook the Chicken

  1. While the sweet potatoes are roasting, heat 1 tbsp olive oil in a pan over medium heat.
  2. Add the chicken pieces and season with salt, black pepper, paprika, garlic powder, and cumin.
  3. Cook for 7-10 minutes, stirring occasionally, until the chicken is golden brown and fully cooked (internal temperature 75°C / 165°F).
  4. Remove from heat and set aside.

Step 3: Prepare the Dressing
