Chicken Chimichangas

Craving something indulgent, crunchy, and bursting with cheesy, savory goodness? These Chicken Chimichangas are the answer. Think of them as deep-fried burritos—filled with shredded chicken, melty cheese, and Mexican spices, then fried (or baked!) until golden brown and crispy.

Served with a side of sour cream, guacamole, or salsa, this dish delivers restaurant-quality flavor right from your own kitchen. Whether you’re hosting a fiesta or just want a fun dinner the whole family will love, these chimichangas are the perfect choice.


???? Ingredients (Makes 6 Chimichangas)

  • 2 cups cooked shredded chicken (rotisserie works great!)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • 1 tablespoon lime juice
  • ½ cup salsa (your favorite kind)
  • 1 cup shredded cheddar or Mexican cheese blend
  • 6 large flour tortillas
  • Cooking oil for frying (or spray oil for baking)
  • Optional toppings: Sour cream, guacamole, salsa, chopped cilantro, sliced jalapeños

1. Make the filling:

In a large bowl, combine shredded chicken, chili powder, cumin, paprika, garlic powder, salt, lime juice, salsa, and shredded cheese. Mix until well combined.

2. Assemble the chimichangas:

Lay out a tortilla. Place about ⅓ cup of the filling in the center. Fold in the sides and then roll tightly like a burrito. Secure with toothpicks if necessary.

3. Fry or bake:

  • To fry: Heat 1 inch of oil in a skillet over medium heat. Fry the chimichangas seam-side down for 2–3 minutes per side until golden brown and crispy. Drain on paper towels.
  • To bake: Preheat oven to 400°F. Place chimichangas seam-side down on a baking sheet. Lightly spray with oil. Bake for 20–25 minutes until crispy and golden, flipping halfway through.
  • To air fry: Air fry at 375°F for 8–10 minutes, turning halfway.

4. Serve hot with your favorite toppings!
