Chicken Chow Mein with the Ultimate Chow Mein Sauce

This chicken chow mein is packed with tender chicken, crisp vegetables, and perfectly stir-fried noodles tossed in a savory, umami-rich chow mein sauce. It’s an easy, restaurant-quality meal that’s ready in just 30 minutes—perfect for busy weeknights or satisfying your takeout cravings!


Ingredients

For the Chow Mein Sauce:

  • 1/4 cup soy sauce (low-sodium preferred)
  • 2 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 1 tsp sugar
  • 1/4 cup water

For the Chow Mein:

  • 8 oz chow mein noodles or thin spaghetti (cooked according to package instructions)
  • 2 tbsp vegetable oil
  • 1 lb boneless, skinless chicken breast, thinly sliced
  • 1 tsp grated ginger
  • 2 garlic cloves, minced
  • 1 medium onion, sliced
  • 1 cup shredded carrots
  • 2 cups shredded cabbage (or bok choy)
  • 1/2 cup sliced bell peppers (optional)
  • 1/4 cup chopped green onions (for garnish)

Instructions

Prepare the Sauce:

  1. In a small bowl, whisk together all sauce ingredients until smooth. Set aside.

Cook the Chicken:
2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook for 4-5 minutes until browned and cooked through. Remove and set aside.

Sauté the Vegetables:
3. Add the remaining tablespoon of oil to the skillet. Stir-fry the ginger and garlic for 30 seconds until fragrant. Add the onion, carrots, cabbage, and bell peppers. Cook for 3-4 minutes until crisp-tender.

Combine the Dish:
4. Return the cooked chicken to the skillet. Add the cooked noodles and pour the sauce over the top. Toss everything together until the noodles are evenly coated and heated through, about 2 minutes.

Serve:
5. Garnish with chopped green onions and serve hot.

  • Prep ahead: Have all ingredients chopped and ready before starting to cook—it comes together quickly!
  • Use fresh noodles: If possible, use fresh chow mein noodles for an authentic texture.
