  • 4 boneless, skinless chicken breasts (about 500 g)
  • 100 g all-purpose flour
  • 2 large eggs (about 100 g), beaten
  • 150 g breadcrumbs (preferably panko for extra crunch)
  • 100 g grated Parmesan cheese
  • 200 g shredded mozzarella cheese
  • 500 g marinara sauce (store-bought or homemade)
  • 1 tablespoon olive oil (15 g) for frying
  • 2 tablespoons chopped fresh basil (for garnish)
  • Salt and pepper to taste

For the homemade marinara sauce (optional):

  • 400 g canned crushed tomatoes
  • 2 tablespoons olive oil (30 g)
  • 2 cloves garlic, minced (about 6 g)
  • 1 teaspoon dried oregano (1 g)
  • 1 teaspoon dried basil (1 g)
  • 1 teaspoon sugar (4 g)
  • Salt and pepper to taste

Instructions

Preparing the Chicken:

  1. Prepare the chicken:
    Preheat your oven to 200°C (400°F). If the chicken breasts are too thick, slice them horizontally to create thinner cutlets. Place the chicken breasts between two sheets of plastic wrap and gently pound them to an even thickness of about 1.5 cm.
  2. Coat the chicken:
    Set up a breading station with three shallow dishes:
    • In the first dish, place the flour and season with salt and pepper.
    • In the second dish, beat the eggs.
    • In the third dish, combine the breadcrumbs and grated Parmesan cheese.
    Dredge each chicken breast in the flour, then dip it in the beaten eggs, and finally coat it thoroughly with the breadcrumb mixture.

Cooking the Chicken:

  1. Fry the chicken:
    Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the breaded chicken breasts and cook for 3-4 minutes per side, or until golden brown and crispy. Depending on the size of your skillet, you may need to cook the chicken in batches.
  2. Drain the chicken:
    Once cooked, transfer the chicken to a paper towel-lined plate to drain any excess oil.

Assembling the Chicken Parmesan:

  1. Prepare the marinara sauce (optional):
    In a medium saucepan, heat olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Add the crushed tomatoes, dried oregano, basil, sugar, salt, and pepper. Stir and let the sauce simmer for 10-15 minutes to blend the flavors.
  2. Assemble the dish:
    Place the fried chicken breasts in a baking dish. Spoon about 2-3 tablespoons of marinara sauce over each piece of chicken. Sprinkle each with shredded mozzarella cheese.
  3. Bake:
    Transfer the baking dish to the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly, and the chicken reaches an internal temperature of 75°C (165°F).

Serving:

  1. Serve:
    Garnish the Chicken Parmesan with chopped fresh basil. Serve with pasta, such as spaghetti, or alongside a simple green salad for a complete meal.
